Turtles
Our school has a weekly activity for the teachers and the indigenous assistant teachers called "learning together". The ATs plan and run the activity to help the Balanda (non-indigenous) teachers to better understand their culture. This week they took us to the big waterfall.
On the trip out several of the assistant teachers were carrying sacks which it turned out held long-knecked turtles.
Unfortunately these weren't pets for us to look at and admire, these were dinner.
The turtles are half-cooked whole, then the guts are pulled out and cooked seperately. They are long, thick white tubing, and closer to over cooked calamari than anything else I have ever eaten.
The turtles themselves take much longer cook.
The shell is broken open and what comes out looks a bit like the cooked ducks you see in Chinese stores.
You then break the carcass up like you would a chicken and voila! Kentucky Fried Turtle.
